Wednesday we had king prawns and poached salmon salad with a Marie Rose dressing to begin with, followed by pan-fried chicken breast filled with sun-blushed tomatoes wrapped with Seranno ham. To round it all off we had Jamaican crunch cheesecake, coffee and my usual Cognac.

On Tuesday we enjoyed roasted fillet of red mullet with seared polenta artichoke barigoule and confit tomato. Dessert consisted of strawberry and lime mousse followed by a selection of mature cheeses. My traditional Cognac rounded off a quite splendid repast.

I had a boiled egg. Do you know how I did that? I first obtained an egg. Any egg will do. Well most eggs anyway. Not crocodile eggs, oh no. I then put some water I had in a pan. I made the water go hotter and hotter and then it boiled. I put the egg in the boiling water for a bit and then took it out again. To conserve energy and to save the planet I put the water I had left over, on my begonias and they died. I might do more eggs tomorrow after this succcss.

Stir together pesto, mayonnaise and red pepper in small bowl; mix well. Spread cut-sides of buns with pesto mixture. Layer bottom half of each bun with 1 lettuce leaf, 1/4 turkey, 1 slice cheese, 1 slice tomato and top half of bun. Enjoy.

Monday was spent by the bay with the family. Today Tuesday we visited a new 'British' restaurant and enjoyed duck pancakes with a rich Hoy Sin sauce, (I understand that this is typical of Britain these days), served on a bed of deep fried rocket leaves, followed by oven roasted chicken breast stuffed with Cumberland sausage meat and then wrapped in bacon. Served with a rosemary and onion jus. We then had a tray of assorted pastries together with coffee, and I of course had my usual Cognac. The restaurant has great possibilities and choice and is worth many more visits in order to try more unusual feasts.

I had a great lunch with my friend Linden. She is like a brother to me and I love her dearly. The audience would just not let her leave the stage, and she is still there now s far as I know, but happy. I also prefer avaline on my ploughmans to bethany, which reminds me of yellow piccalilly with creepy smelly bits in, but I like playing chess.

Lunch was better today with Avaline. The rice and the chicken were perfect, and the veritables were crunchy. How strange that Dillon sharpened the water to a point and plunged to hidden shallows. I have never had a Bethany on my ploughman's is it full of saturated fat? This is not good news for the brothers and my windows are melting. Strange.

3 cups mashed potatoes. Salt and freshly ground black pepper 1/2 cup grated Parmesan Flour, for dredging 1/4 cup extra virgin olive oil Leftover gravy Re-season potatoes with salt and pepper, stir in cheese. Take a mayonnaise or peanut butter lid, line with plastic wrap to use as a mold. Pack the potato mixture into the lid, unwrap it and place the polpetti on a baking sheet. You may refrigerate them covered with plastic wrap until the next day, or fry immediately. To cook, dredge the patties in flour. Heat olive oil in a skillet over medium-high heat, add patties. Just before frying, dredge the polpetti again with flour. Add the polpetti to the oil without crowding them (you may have to cook them in batches). Cook until underside is golden brown, about 5 minutes, flip and brown the other side. Remove from the pan and drain on paper towels. Serve hot with leftover gravy. TWANG!!

Friday lunch was extremely enjoyable at one of our old haunts with crisp fillet of seabream with a saute of baby squid and a salad of olives, tomatoes and capers for myself, and tagliatelle of buttered wild mushrooms with pesto and toasted hazelnuts for my wife. For dessert we both had bitter chocolate torte with salted caramel ice cream. I then had several of mu usual Cognacs. We like this restaurant and always have that homing instince for what is extra special.
