Wednesday is always a neither here nor there day, being the middle of the week, but we livened it up as usual with a splendid lunch. To start with we had soup of the day (Broccoli and Stilton), with Judges sourdough bread & butter. To follow Garganelli pasta with wild mushrooms, baby spinach and garlic cream. To finish we enjoyed warm ginger cake with toffee sauce and clotted cream. A couple of my usual Cognacs made it all perfect.

Tuesday lunch was espcially enjoyable following a long weekend in San Mateo. We started with poached salmon fillet with prawn and clam sauce, new potatoes, and buttered spinach. The main course was poached breast of guinea fowl with spring vegetables, and
dessert was fresh orange and pink grapefruit set with a passion fruit jelly The superb black coffee, sherry wine, are also worthy of mention. I rounded it all up of course with my usual Cognac or three. A satisfying repast indeed.

For lunch I had the worlds most amazing sandwich. I mainly ust cleaned out my fridge and shared my creation with my friends.
I first took a 12 inch firm white bread sub loaf. Cut it in half and then toast the bottom half on just the cut side. Then in this order I put on Mayo, ham, American cheese, red and white onions mixed, a little bit of relish, some pickled horse radish and then some more cheese but this time cheddar. ThenI toasted it again in till it's all a little limp and holds together. And then put on some salami sliced very thin, some yellow mustard, a little bit more mayo and then spicy dill pickles also sliced very thin. A little more American cheese and then toast it again but not as much as the last two times so that the cheese just starts to melt. Then add a little bit of steak sauce and some chopped chicken and then a small layer of tomato pesto sauce and then some mozzarella cheese and then put the top half on and cut it in half.

We celebrated the end of a very successful week when we treated the staff to a luch starting with celeriac and apple rmoulade with salad and lemon oil, followed by beef bourguignon with herby mashed potato. The dessert was superb with poached pear with cardamom and mint syrup on an almond sponge, with apple sorbet. An excellent assortment of cheeses followed on the cheese board, together with a wonderful black coffee and three of my usual Cognacs.

Guys, sorry it has been so long since we have last talked. I have been busy relocating to this lovely state called Illinois so that I can enjoy a steady diet this summer of cicadas, which come out every 17 years. This should add another 30 or so years to my life of which I hope to enjoy on my unsinkable boat in the Drakensbourg Mountains after the 2012 apocalypse. I did eat Cicadas for lunch with a side of switchgrass and a glass of distilled water.

Today Friday we deloghted in filo wrapped Brie cheese beetroot and orange flower chutney to start with, followewd by salmon fishcakes with lemon grass, ginger and coconut laksa served with new potatoes. Tuesday was a little more up market as we had a couple of hours to spare. For starters we had
warm Stilton & celery tart with crisp apple, walnut & chicory salad. We then followed that with
roast Temple Farm chicken breast

Monday was catch up time and so we had lamb tikka diced lamb marinated with spices and grilled on skewers and served with salad and mint sauce. It arrived at the office in good time and was piping hot. No short cuts here. A good inhouse spread.
