Lancashire hotpot with mashed carrots and turnips with melted butter and a crust. Also a bit of pickled red cabbage. Landlady Shanaz and her husband Murtaza who have changed their names to Ramsbotham, served us pints of their new Real Ale "Mullah Lite". I love Billinge and I hope that our new hosts from Afgahnistan can soon cheer us all up after the past tragedy.

Lunch was actually diner. Myself and the wonderful Bethany spent the afternoon enjoying the Holmfirth Folk Festival, where we consumed more than our share of 'Real Ale'. This was followed by a very romantic dinner at the tiny tapas bar just round the corner from the 'Nook' pub. After a superb fish tapas we went to see one of the worlds all time great guitarists, Jan Akkerman. A superb day, fantastic food, great music & the dark hours were spent in relaxing company. Awwwwwwww.

We stayed in on Wednesday and had sandwiches delivered so that we could get the order out, but on Thursday we had broken its back, and we enjoyed salmon & dill lasagne consisting of layers of pasta and salmon, interwoven with a creamy white wine and mascarpone cheese sauce, topped with mozzarella and cheddar cheese. As tomorow is Friday and after a successful week we will have our usual splash out on something special and I will look forward to my Cognac.

Monday lunch was spectacular, and was held in the boardroom. We started with prawn salad with a brandied Marie Rose sauce, followed by fillet steak on a Polenta Cake with smoked bacon & leeks with a Port sauce. Sweet was Papaya cheesecake with an orange syrup. A few Cognacs ensured that not much work was done during the afternoon, but the visitors were impressed.

Try This....1 cup corn meal
1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 tablespoon oil
1/2 tablespoon powder curry
1 small can cream corn
1/2 cup corn starch
8 regular franks
1 slightly beaten egg
8 popsicle sticks
Be sure franks are dampened a bit but not wet. Mix all ingredients together, including egg, creamed corn, and oil. Add buttermilk a little at a time until it is at the right consistency. Almost like a cake batter). Set aside for a few minutes allowing baking powder to rise.
Place corn starch in a flat dish. Push popsicle sticks into franks and roll then in the corn starch, shake off eccess, then coat with the batter.
Heat enough oil in a pan to cook four dogs at a time. Cook to the degree of brownness you desire. Deeeeliciosos !

On Friday we over indulged ourselves with poached lobster which came with Hollandaise and parsley potatoes Excellent. We followed all this with scrumptious chocolate and roasted banana cheesecake. Black coffee and my usual Cognac were the order of the day. An excellent repast for the end of a very profitable week.

We all went out on Wednesday and enjoyed smoked mackerel rillette
with toasted sour dough bread to begin with, followed by pan-fried fillet of sea bream with vegetable and noodle stir fry and mango and avocado salsa. We rounded all that off with amaretto and raspberry tiramisu, and I of course had my usual Cognac. Well two actually.
